For this bottling, he sources sustainably farmed Colombard from nearby vineyards certified under France’s HVE program — a sustainability benchmark focused on biodiversity and low-impact farming.

The grapes are fermented at controlled temperatures with the help of neutral yeast, then aged in tank before being lightly fined and filtered. Bottled the following spring with a modest touch of sulfur, this is crisp, honest southern French white — clean, easy, and crushable.
