Story π: Maxime Crotet, hailing from Beaune, grew up steeped in the world of fine wine and food, with his grandfather owning a Michelin-starred hotel. After working alongside natural wine legend Frederic Cossard at Domaine de Chassorney, Maxime adopted natural viticulture and winemaking practices. In 2021, he launched his own wine project in Beaune, sourcing grapes from local farmers and other exciting regions.
The βOpulenceβ comes from the upper section of a vineyard planted in the 1960βs in Chelly-les-Maranges. The wine undergoes 30 days of semi-carbonic maceration with a combination of pumpovers and foot trodding, followed by 12 months of aging in French oak. It is the most structured Pinot in Maxime's range, with excellent aging potential, but remains elegant and well-balanced.
