"The 1-hectare parcel of 45 years old vines on granite and granitic sand is cultivated and vinified by Claude Straub. The grapes are hand-harvested, sorted in the vineyard and then gently pressed as whole bunches. The juice is then fermented over the winter with indigenous yeast and zero sulfur. Elevage for 8 months in fiberglass tanks, bottled with zero addition of sulfur (9ppm SO2 total). Unfined and unfiltered."
