After fourteen vintages as winemaker for the negociant Camille Giroud, David Croix set off on his own mission to showcase the vines surrounding Beaune. Working organically in the vineyard, David crafts wines that are elegant, full of character, and provide insane value. The Premier Cru plot Les Bressandes is less than 1 hectare of clay soils sprinkled with gravel. The grapes are destemmed, fermented in open top wood vats, and never fined or filtered.
