Story 📖: Founded in 1980 by three friends just out of architecture school, COS helped ignite Sicily’s natural wine movement by returning to pre-industrial farming and winemaking practices. The vineyards are farmed biodynamically, and in the cellar, the approach is minimal—fermenting with native yeasts and aging in amphora or neutral vessel to let the character of the grape and terroir speak clearly.
Their Frappato is iconic for a reason. The grapes are hand-harvested from the red sands and limestone soils of Vittoria, fermented with native yeast, and aged in concrete to preserve its pure, fresh-fruited charm. No makeup, no masking—just the delicate beauty of Frappato in its most honest form.
