Pepe Raventos and his team far exceed any requirements for Cava production, but you won't see that word anywhere on the label. They want to tell the story of their place, like a few other high quality sparkling wine producers in the area. They are certified organic. This sees primary fermentation with indigenous yeasts in steel tank, then secondary fermentation in bottle with 18 month’s sur-lie aging before disgorgement.
