Details 📌: From 40 year old Palomino vines in Pago de Carrascal, a historic site 20 km from the Atlantic. Soils are Barajuela albariza, a layered marl unique to Jerez. Hand harvested in multiple vineyard passes, with 90% fermented in stainless steel and 10% from sun dried grapes fermented in old sherry casks. Aged 6 months on lees before bottling, unfortified, in the style of “vino de pasto.”
📖 Story: Bodegas Luis PĂ©rez was founded in 2002 by Luis PĂ©rez RodrĂ­guez, former head winemaker at Domecq Sherry, with the goal of reviving table wines in Jerez. Today, his son Willy PĂ©rez leads the project, part of a new wave of Andalusian winemakers reimagining the region’s identity beyond fortified wine. Together with peers like Ramiro Ibåñez, Willy is mapping terroirs and rediscovering forgotten traditions.
“El Muelle de Olaso” takes its name from a wharf in SanlĂșcar where Luis PĂ©rez Sr. played as a child. It embodies the revival of vino de pasto, unfortified Palomino Fino wines that were once the daily drink of Jerezanos. Fresh, savory, and terroir driven, it bridges the world of white wine and sherry, offering a glimpse into both the history and the future of the region.
