Pisador has tried to lead país to a place of greater ambition, especially with the texture, which goes beyond the variety’s rustic tannins and to work further with the structure, to deepen it, to build a type of architecture of país that’s manifested here as a web of firm tannins that seem to dig in on the palate, something like the foundations of a house, like the cement that holds everything up. Everything else is layer upon layer of fresh, crisp, intense red fruit with an herbal touch and firm acidity that expands across the palate contributing freshness and tension. This, the third version of Pisador is the best we’ve seen yet.
