Grape: Catarratto

Style: Medium bodied with bright acidity and a little texture. Lemon, apricot, herbs, and a saline finish.

Details: Organic bush trained vines 7km from the Ionian and Mediterranean seas. Grown in silty, limestone rich soils in SE Sicily. Fermented with native yeasts on the skins for 5 days in steel, then aged in concrete. Minimal SO2, no fining or filtering.

Story: Salvatore ‘Turi’ Marino broke away from his family’s bulk wine legacy to start something radically smaller, personal, and rooted in Pachino’s terroir. With his wife Stefania, he farms 15 ha. of mixed agriculture and does nearly all the work himself. Catarratto is rare here, but he is committed, following his grandfather.
