Now headed by the winery’s second generation, Benedicte and Stephane Tissot produce 28 wines from 40 hectares, farmed organically, biodynamically and chemical-free. ‘BBF’ is an Extra Brut sparkler, aged five years on the lees before disgorgement. The final wine is smokey and bready, with creamy notes of pear, vanilla, and citrus.
