Enea founded and still runs the co-op, in addition to helping neighbors make wine, working closely with the Demeter organization and helping set up similar co-ops around the world. This is traditional Lambrusco with acidity and bubbles that can wash down perfectly the buttery sauce of any pasta, and stand up to rich meats at the same time.
