From fifty year old vines of Poulsard planted in En Curon, the fruit was destemmed by hand and spent two months macerating gently, sans pigeage, before being pressed back to vats for a year of rest. A notoriously difficult grape to grow and vinify, when done right, few varieties hit quite like this.
