Style 😋: Skin contact pet-nat that is complex and crushable. Yellow peach, dried apricot, and honeyed notes from the passito must, with a subtle, earthy undertone from the skin contact. 

Details 📌: "Il Baffone" translates to "The Big Mustache." Dry base wine of Nascetta and Moscato Giallo undergoes 5 days of skin contact. It is then bottled with a reserve of passito (late harvest) must to trigger a secondary fermentation in the bottle, creating the natural bubbles. The wine is bottled with zero added sulfur and is not disgorged.

Story 📖: Fausto and Cinzia Cellario are 3rd generation winemakers in the Langhe, fiercely dedicated to local varieties and traditions. They farm 30 hectares organically and are true specialists in indigenous grapes. All fermentations are spontaneous, and sulfur is used only minimally at bottling. They are celebrated for crafting profound, traditional wines that are a pure expression of the southern Langhe's terroir.
