"This wine is made from 100% Chardonnay and is macerated. Although it is the same maceration as the 2015 wine with the same cuvée name, the style is quite different. This year, it was brewed as a regular white wine (direct press without maceration), but as mentioned above, it was a very hot year and for various reasons, alcoholic fermentation was not completed even after two years of aging, so the pomace after direct pressing of the 2020 Chardonnay was immediately destemmed, and added to this wine from 2018, and re-fermented using yeast from the 2020 grapes. After that, it was macerated for about 6 months until it became dry, and then only the free-run wine was extracted and allowed to settle for several months before being bottled. Although it is a white wine, it has been macerated, so I think it tastes closer to red wine.

Looking back, I think this is a diverse wine that represents the climate of this year. The color is deep, and the aroma is rich and complex. It gives the impression of being packed with various elements. When it was bottled, each element was facing in a different direction, but it is coming together over time. However, I think it will take several more years for it to truly come together, so I strongly recommend that you enjoy it after observing it for a few years. If you drink it early, it is fine to drink it immediately after opening, unlike the red wine mentioned above. Currently, it has a characteristic aroma of cherries and peaches, which are like liqueurs made from fruits with one seed. However, this is also a large-scale wine, so it will need to be stored slowly in the cellar."
