Story 📖: Mathieu Apffel is originally from Jura but began producing wine in Savoie in 2013. He launched his label in 2017 after acquiring land and a cellar from a retiring vigneron. Joined by his wife Camille in 2020, they now manage 4.5 hectares in Saint-Baldoph, primarily planted with Jacquère vines aged 30-70 years, set against the picturesque backdrop of the Massif de Chartreuse. 

The couple has been converting the estate to organic and biodynamic practices. In the cellar, fermentation takes place in inherited vessels like stainless steel, fiberglass, and used barrels. Believing in minimal intervention, Mathieu avoids filtration and sulfur addition, focusing on wines that authentically reflect their terroir.
