Style 😋: A profound and singular volcanic white. Intensely saline and mineral driven, with a complex bouquet of preserved lemon, chamomile, and a distinct, briny tang from the flor. Bone dry and textured with a vibrant, electric acidity that cuts through the wine's nutty, leesy depth, leading to a long, savory finish.
Details 📌: Sourced from a single parcel of 80-100 year old ungrafted vines, rooted in volcanic soil at 1400m elevation. The grapes were hand harvested, destemmed, and gently pressed. Fermentation and an 11 month aging took place spontaneously in two used 500 liter Manzanilla sherry botas, where it developed a partial layer of protective flor yeast. Bottled unfined, unfiltered, with only a minimal addition of sulfur.
Story 📖: Juan Francisco "JuanFra" Farina is a visionary winemaker in Tenerife's Valle de Güímar, known for his sustainable farming and dedication to local varieties. His project, Los Loros, is named for the region's laurel shrubs. 'La Bota de Mateo' is his most ambitious wine, crafted from centenarian vines he recuperated on a hard to reach mountainside. This wine showcases his innovative spirit, using a solera like method under flor to create a stunningly unique expression of Canary Island terroir.
